Maxine Silsby grew up in the UK and has over twenty years of experience in Hospitality Management. She trained at the famous Goring Hotel in London. She has worked at a number of unique boutique hotels. She was Deputy GM at Rhinefield House in the New Forest and General Manager at the Relaix and Chateau Amberley Castle.
A well earned career break resulted in her moving to Rwanda where she started Food & Stuff Ltd with business partner Debby Leatt.
Maxine has been the hospitality consultant for Volcanoes Safaris for over five years, in charge of training and development of the lodge teams, implementing standards; she has also taken over the interior decoration.
Debby Leatt, an Executive Chef, is from Zimbabwe with over fifteen years of experience. After training in South Africa, Debby moved to the UK where she worked as a stagiare at The Fat Duck, Sous Chef at Calcot Manor, stagiare and Head Chef at Avon Gorge before getting involved in Food & Stuff Ltd.
Debby’s food is well known in Kigali, catering for all the Embassies, with her team of personally trained chefs. Debby trains and mentors the Volcanoes Safaris chefs along with advising them on menu content, purchasing and food safety.
